This place is a haven from the bussle of city life! I enjoyed every minute of it!

The staff is so friendly here. Everyone went the extra mile. I felt spoiled like a princess! The chef made fabulous food and I loved the coziness of the room. I will be coming back on my own to bring my family! I love it there!

I was so happy that I was able to work with both Stacy and David so much to be sure that A\'AI and myself would be able to have a good experience while we were in residence at the ranch.

I participated in the Genesis Retreat Oct 21-25. The ranch was great. The rooms were comfortable and charming. The setting on the hill overlooking the desert was perfect. It was like a quiet oasis. The meeting room was really nice and I cannot say enough about Chef David and the meals. He made healthy food taste so good. I wish I could have him at home! Or I would like to visit the ranch one week a month just to enjoy the peace and quiet and David’s great cooking! He should give healthy cooking lessons. David was also very helpful to me that I needed air in my car tires and David went out of his way to help. I really appreciated that.
I think the COD Ranch is a great place fro any group or company retreat. It was so comfortable and relaxing.

Hi David,

It took me a minute to figure out that the post-it had your email address (sigh/moving too fast!). Thank you again for your wonderful food and nourishment on so many levels while we were there in Oracle. As promised, here is the pancake recipe. I'm not a real measurer when I cook so these are "guestimates" :-) This makes about 30 pancakes

3 cups of Pamela's gluten free pancake mix (see http://www.glutenfree.com/Pamelas-Products-Baking-Pancake-Mix/Item956039 for more info)
about 1 and a half cups of smashed, cooked yams
about a cup of brown sugar
3 eggs
about a cup of soy milk or more (depending on consistency)
about 2 cups of canola oil
cinnamon, ginger, nutmeg, allspice and vanilla extract to taste

In a large bowl, combine mix and dry spices; then beat in yams, sugar, eggs and vanilla. Add about half the oil (should be like thick mud), then add some soymilk, then more oil til it's a medium thick batter (it's thick but pourable enough so that the heat can conduct all the way through the pancake). I'm also throwing in as a bonus (smile), a wheat free crust. It is crumbly so it's press down in a pan and/or crumble on top:

Equal parts oat and brown rice flour, salt. For every cup of flour add about 1 teaspoon of baking powder , a tbsp or so sugar (agave or raw sugar works well), half a stick of butter (softened) and blend quickly with a little soymilk and a healthy shot of canola oil till it's moist biscuit consistency. Don't over mix or it will get tough - just enough to blend. Gently press dough in pie pan in a thin layer (it will rise some) and fill with desired filling. If it needs a top, sprinkle dough all over the top with the fact that dough will both spread and rise in mind. You can add a little nutmeg and cinnamon to the dough. You should brush dough with butter when done and sprinkle light coating of brown sugar and cinnamon over dough before baking. Dough cooks faster than regular dough so you may want to take foil and cover edges of pie to keep it from burning before pie is done. Enjoy.

Hey, Dave, sorry I had to get away Sunday morning (at 4:30a, no less) without having a chance to say goodbye and thanks for everything last week at COD. Already missing your great cuisine and friendly way of getting anything done we could think to ask for. (And we certainly were able to think of a lot, lol.) Many thanks for making our getaway to the desert so cool, and hope you're getting a little bit of rest after contending with our bunch! :-) Bests Porter

As a recent guest at the COD Ranch, attending a Genesis Transformation retreat, I unequivocally give it a 4 star rating! From Chef David's delicious (and clean food!) meals, to the comfortable cabins, I would go again in a heartbeat. I treasured the sun rises over the mountains in the distance; the birds singing and the fall flowers, even the night time coyote serenades. The beds were so comfortable and the light-weight down comforters were perfect to ward off the nighttime chill – of course we kept the windows open – Montana folk love cold bedrooms! Thank you COD Ranch - I hope to attend another retreat at your site soon! Tere
